Lanai’s Football Sunday Bangin’ Buffalo Chicken Balls Recipe


Football Season is here and it is time to start hosting those Football parties!  Don't settle for a bag of chips, dip and a case of beer! That is just boring! Here is a great recipe that will surely delight your guests. While the men are hooting and hollering in the man cave, living room or basement the ladies can be huddled in the kitchen talking about the latest gossip and rolling up some Buffalo Chicken Balls with a side of Blue Cheese and celery sticks.



You will Need:
·         5 Boneless chicken breasts
·         1 cup shredded cheddar
·         ¼ or 1/2 cup of your favorite hot sauce. (I prefer Franks Hot sauce) * use more or less for your heat preference
·         1- 8oz pack of cream cheese
·         3 eggs
·         1 cup flour
·         2 cups Bread crumbs
·          Vegetable cooking oil



Steps
1. cube chicken breasts and pan fry until fully cooked.  Put in food processor and finely chopped. Set aside in a bowl.

2. Combine cream cheese and hot sauce in food processor. Once mixed well. Add to ground chicken , including shredded cheese . Mix well

3. Prepare 3 bowls. 1 for flour, 1 for beaten eggs, 1 for bread crumbs

4. form chicken mixture into 1 ½ tbsp balls.

5. dip each ball in bowls in this order: flour, eggs, bread crumbs

6. Heat oil in a deep pan or fryer until you see bubbling- (medium heat) 5-7 minutes

7. drop buffalo balls into pan and brown. Make sure they begin to fry.


8. Once browned on all sides, Set on a plate with a paper towel to drain excess oil.

For safety reasons , make sure you turned off your stove.

  serve with blue cheese for dipping and some celery sticks!


I doubt there will be any leftovers but
 you can freeze any (unfried) balls in a sandwich baggie for a later day.
