Lanai’s “Slap Somebody’s Granny, It’s So Good” Meatloaf & Mashed Potatoes



Disclaimer: no actual grannies have been hurt in the making of this recipe. Lanai does not really endorse slapping a granny, so don’t do it!

Ingredients
  • ·         2 lbs ground beef (yields 5-6 slices)
  • ·         9x5 inch loaf pan
  • ·         ½ cup ketchup or use ½ can of Hunt’s Dinner Starter Meatloaf sauce
  • ·         1/3 cup Brown Sugar
  • ·         1 tablespoon lemon juice (for sauce mixture)
  • ·         1 teaspoon dry mustard (powder)
  • ·         3 slices of bread shredded or 1 cup bread crumbs
  • ·         ¼ cup diced onion
  • ·         1 beaten egg
  • ·         1 cube of beef bouillon crumbled up or 1 tablespoon of your favorite hamburger seasoning
  • ·         3 more table spoons lemon juice (for meat mixture)


Let’s Begin!




Preheat oven to 350 degrees
Get 2 bowls
Bowl 1- Sauce Mixture
Combine, ketchup or meatloaf sauce substitute, brown sugar, 1 tablespoon lemon juice, and dry mustard. Mix well. Set aside.





Bowl 2-Ground Beef Mixture
Combine ground beef, bread crumbs, onion, egg, seasoning, 3 tablespoons lemon juice and 1/3 cup of sauce mixture. Mix well with your hands, get all in there!

Next step
(I recommend putting your potatoes to boil now) * See mashed potatoes recipe below

Form meat mixture into a loaf and place in the loaf pan.  Bake for 1 hour. Pour out excess oil and fat and dump the remaining sauce on top of the loaf. Bake for 10 more minutes.




Let cool 5 minutes before cutting slices.

Finally dig in but refrain from slapping somebody’s granny. Damn it’s good!











Lanai’s Famous Homemade Slap Someone’s Granny Again Creamy Mashed Potatoes



Disclaimer: Again, no actual grannies have been hurt in the making of this recipe. Lanai does not really endorse slapping a granny, so don’t do it!
Ingredients
  • ·         5 medium red potatoes
  • ·         ½ cup milk
  • ·         ¾ cup butter
  • ·         1 cup shredded cheddar
  • ·         1 teaspoon garlic powder
  • ·         ¼ teaspoon pepper

 Clean, peel and cube potatoes and place in a pot with water about 1 inch above potatoes. Sprinkle in a little garlic powder and let boil for about 25 minutes or until tender.


In a bowl mix milk, butter, garlic powder, pepper and cheese. When potatoes are tender and drained, pour them into the mixture. Use a cake beater to combine everything or do it the old fashioned way using a fork and elbow grease. (lol) Add salt to taste.

To top off this totally awesome meal, throw in a can of corn or another favorite vegetable. If you decide on corn I totally recommend simmering it in a small saucepan with a 3 tablespoons of butter,  1/2 teaspoon salt,  ¼ teaspoon pepper.



Enjoy and again refrain from slapping somebody.
